Who is Addie and Can She Make Me More Coffee?

We went to Memphis last weekend to see some friends, and it seemed like the best time to make something out of the Talk About Good! cookbook I bought with them the last time we were all visiting New Orleans. These are some of our favorite traveling friends. You know the ones – down for any plans and a blast to hang out with in general.


They recently had a beautiful baby girl, so we decided to go visit them at their house for chill weekend where we watch Netflix (which is different than Netflix and Chill, I’m told). And what’s the best way to help new parents? By making them weird food and creating some coffee cocktails, of course. Actually, it's probably doing their dishes or holding the baby while mom sleeps, but they were too nice to say so.


We started Saturday with Addie’s Rum Coffee, which is probably the best recipe that will ever show up on this blog. Full stop.

Ingredients:


3 cups of percolated coffee

1 pint of vanilla ice cream

1 cup whipping cream, whipped

3 Tablespoons honey

½ cup of rum or “to taste” which is about double that amount in this house…

1 cup of crushed ice


That's right, folks. This recipe is just coffee, ice cream, and rum.

Did you whip your cream first? Well, start by going back to whip your cream to stiff peaks. Ask your husband to make a pot of coffee. Then start the coffee maker after he forgets. (Totally hypothetical situation.) Scoop some ice cream into a pitcher and pour your hot coffee over the ice cream. Measurements of ice cream don't matter, measure with your heart.


Add honey to the whipped cream. Then fold your honey whipped cream into the coffee-ice cream mixture. AKA Stir vigorously because you’re too impatient to just fold it in. This looks very clumpy with a lot of floaties in it until everything melts together. It was at this point that the husbands started supervising and questioning my sanity. But be patient, and you shall be rewarded. Add rum to the pitcher with reckless abandon and add some crushed ice.


Pour into glasses and serve it to the very tired new parents. Serve them more every time you see their glasses getting low. And then do the dishes and hold their baby.

Final Rating: Delicious. The husbands s t r o n g l y suggested we make another pitcher on Sunday. Would make it again for a boozy brunch to serve with french toast and bacon. Just don’t make this if you plan on being any kind of productive that day.
