What looks like it was made with a cheese packet from Kraft Mac and Cheese and tastes like orange marshmallow fluff? This Circus Peanut Salad recipe from the Love Bakes Good Cakes blog. Nothing says fun like yet another gelatin salad. Am I right?
Ingredients:
44 circus peanut candies, divided
1 cup of boiling water, divided
1 6-ounce package of orange gelatin
2 cans (8 ounces each) of crushed pineapple, not drained
1 carton (8 ounces) of whipped topping
If you haven’t heard of circus peanuts, they are bright orange, banana flavored (debatable), and peanut-shaped. If you’re asking yourself why, this isn’t the right blog for you. You can only order these candies online in a 2-pound bag, because what sane person would want a teeny, normal-sized bag of weird vintage candies? And when I opened said bag of candies, the first thing I noticed was the sickly-sweet, overwhelming marshmallow smell wafting out of the bag. Second thing I noticed? They were hard as a friggin’ rock.
These candies were my grandpa’s all-time favorite, so naturally, I made my husband and kiddo try them first. Both initially gave a thumbs up, but after about an hour, my husband came back in from the garage to tell me he could STILL taste it. It’s the “banana” flavor that lasts…apparently. Like one of Moira’s fruit wines.
You start by cutting 32 of the peanut candies into small pieces. Cutting these little marshmallow bricks up took far more effort than I had planned for and made everything they touched sticky. Do NOT pet the dog after cutting these up, trust me. Then add ¼ cup of the boiling water to your candies to melt them and stir until smooth while contemplating your life choices.
Then, dissolve your orange gelatin in the remaining ¾ cup of boiling water. Stir in your VERY orange melted candies and your pineapple. Refrigerate until partially set. Or don’t. We’ve talked about this, I’m not your mom.
Fold the whipped topping into your partially-set gelatin mixture and then dump it all into a greased 9x13 pan. And now, we wait. You can pass the time like I did by trying to toss circus peanut candies into a wine glass, but be forewarned, they DO NOT BOUNCE.
Once the gelatin is set (again, ugh) you can cut this into squares and top each square with a circus peanut. This final step is not recommended for anyone who cares about their dental work.
Final rating: A+ for taste. It actually tastes good? I wasn’t expecting that. A+ for weirdness and C- for texture. I plan on using the remaining candies in my 2-pound bag as a doorstop or maybe I'll fashion them into a bicycle helmet.
