Guac in a Pie?

Ugh, I hate avocados, so why do I keep doing this to myself? This week’s offender is the very aptly named Avocado Lime Pie from the no-doubt-instant-classic “Woman’s Day Encyclopedia of Cookery Vol. 1”. I found this at a thrift store, but I only found the one for the letter “A”. It has aspics in it though, so what else could a girl possibly need??

I never thought I’d be making guacamole as the start of a dessert, but here we are!


Ingredients:


1 large ripe avocado

1 can (14 ounces) of sweetened condensed milk

Grated rind of 1 lime

½ cup fresh lime juice

2 egg yolks

Dash of salt

1 baked 9-inch pie shell (BAKED, friends. Start it NOW.)

Avocado for garnish

Chopped nuts


Learning from my grocery pickup of the single banana last week, I purchased one single avocado for this recipe. And then immediately disappointed my husband who thought we might be having Mexican for dinner. I mashed up the avocado. In a separate bowl, I mixed the sweetened condensed milk, well-beaten egg yolks, lime rind, lime juice, and salt. My lime juice is only the finest lime juice you can get out of those plastic lime thingies.

Next, you fold in your avocado, gently. You wouldn’t want to lose that light fluffiness the fruit is known for (???). Then, pour the mixture into the pie crust that you definitely baked beforehand and didn’t have to wait on. Chill for several hours – you and the pie. You’ve earned it.

You’re supposed to garnish this thing with avocado balls that you’ve made with a melon baller. I’m just thanking my lucky stars I only bought one avocado, so I don’t have to make those. I topped my pie with candied walnuts I had in the pantry and served it up to the family.


My daughter was thrilled I was finally making a dessert but was heartily disappointed after one bite, as was I. My husband, however, enjoyed every bite and went back for seconds. I have photographic proof of this.

Final rating: Tastes like a tragic key lime pie. Avocados are too expensive for this. But don’t worry, we’re not done with making desserts just yet. My friends have made sure I keep turning out the surprises for the holiday season.
