Today we tried our hand at making a Cheese Sandwich Loaf. This gem is from the Betty Crocker Lost Recipes cookbook which you can purchase on Amazon here, but trust me when I say, most of these recipes may be better off lost.
The ingredient list is many and varied:
Filling #1:
1/4 cup finely chopped cooked ham
3 slices cooked bacon, crumbled
1/4 cup sliced pimientos, drained & chopped
2 tablespoons mayonnaise
Filling #2:
4 hard-cooked eggs
Another 2 tablespoons of mayonnaise
Filling #3:
2 ounces of cream cheese, softened (you know there had to be cream cheese involved)
1/2 cup finely chopped, peeled cucumber
Another tablespoon mayonnaise
Filling #4:
1/3 cup finely chopped sweet pickles
1/4 cup finely chopped fresh parsley
Surprise! 3 more tablespoons of mayonnaise
The Rest:
1 loaf of unsliced sandwich bread
2 tablespoons butter, softened
2 more packages of cream cheese, softened
1/4 cup milk
Additional watercress or parsley as desired, because why not?
Making this was a tedious process that involved slicing off the crust of the bread, which surprisingly I don't do too often, even though I have a 6-year-old. Then, we made several different fillings, out of which only the red one was really edible. The dogs were still confident they wanted in.
Then, some assembly was required. After you stack all of the bread and strange fillings, you ice the whole thing like a cake with a pseudo-cream cheese frosting.
The whole effect was something out of a mid-century wedding shower. And it tasted like wet paper, sweaty feet and the word "bacon" whispered from another room. I think combined, the family ate one whole bite of each layer. The dogs, however, loved it and requested it as the cake for their future birthday parties.
Final rating: Vintage Garbage. Would make it for a baby shower of someone I didn't like.
